Every beer garden in Bavaria serves it. Nobody agrees on the exact recipe. And it was invented in the 1920s by a hostess trying to use up overripe Camembert. Obatzda — “mashed,” in Bavarian dialect — is the state’s most democratic cheese: a spread, a snack, a whole culture in a bowl.
The story
Katharina Eisenreich ran the Bräustüberl in Freising, near Munich. Ripe Camembert that couldn’t be served as-is got mashed — obatzd — with butter, paprika, caraway, chopped onion, and a splash of beer. It was thrift that became tradition. In Franconia, the same idea goes by Gerupfter.
A century later, it’s the defining Brotzeit dish: the thing you order with a Brezn and a beer while the afternoon goes golden. Alpenhain says it made history in 1994 by producing the first supermarket-scale Obatzda — the family that industrialized the beer-garden staple.
What it tastes like
Depends on the hand that made it — that’s the point. The base notes are constant: ripe, mushroomy Camembert depth, butter richness, paprika warmth, caraway’s anise edge, onion bite. Good Obatzda is punchy, spreadable, and gone too fast.

How to serve it
Thick on a warm Brezn (pretzel) — the salty, chewy lye crust is the delivery vehicle the dish was designed around. If you’re making it ahead, serve the onion on the side so it stays sharp. This is not a cheese-board cheese; it’s a beer-hall cheese.
Drink with it: Weissbier (Hefeweizen) — the beer-garden classic. The wheat beer’s fruity yeast and soft carbonation cut the butter and ripe-cheese richness. A Helles works too; it’s Bavaria’s everyday pour next to a Brotzeit board.
Finding it in America
Make it yourself — honestly. No US distribution for Alpenhain’s Obatzda could be verified, and the dish is three-quarters assembly anyway: a ripe Camembert, butter, paprika, caraway, onion, beer. In a pinch, a good German deli’s house-made version is the thing to ask for. (Recipe →)
