“It’s not brie — it’s Briette.” Champignon’s slogan is doing real work: this is the brie-shaped hole in the American cheese case, filled by a 4.4-ounce wheel that arrives at perfect ripeness every time thanks to an individual “fresh pack” seal. Launched in the US in early 2021, Creamy & Mild is the plain one — sweet milk, mild rind, zero intimidation — and the best argument that small-format brie doesn’t have to be a gamble.
The story
Briette was built for the American shopper who hovers at the specialty case and walks away. Champignon North America — the exclusive importer, based in Englewood Cliffs, NJ — announced it in February 2021 in three flavors: Creamy & Mild, Creamy & Blue, and Creamy & Buttery Red. The concept: a 125-gram (4.4 oz) lactose-free soft-ripened wheel, ripened to perfection at the Lauben dairy, then sealed in an innovative protective “fresh pack” that holds it at exactly the right creaminess for its entire shelf life. Champignon’s official line: “each wheel is ripened to perfection and sealed in our innovative protective package to ensure the highest quality in every package.”
The fresh pack solves brie’s two American problems at once. First, ripeness roulette — no more guessing whether the wedge is chalk or soup. Second, the rind: the sealed ripening keeps the bloomy rind very mild, which the launch coverage flagged as “often a deal breaker for consumers who don’t like the intense taste of a Brie’s exterior.” The wedge-shaped window on the box is the “window to freshness”; the QR code on the back leads to thisisfinecheese.com, the brand’s US site with pairing ideas and recipes.
What it tastes like
Sweet, milky, and calm. The paste is yellow-white and soft throughout; the white rind is edible and barely assertive. Think the middle of a good brie — the creamy part everyone fights over — extended edge to edge, with none of the ammonia edge an overripe wedge can develop. This is a crowd cheese in the best sense: it offends no one and converts the brie-curious.
Flavor profile: intensity low · creaminess high · milkiness sweet and rich · rind mild
Aging: ripened to perfection, then sealed — consistent by design · Texture: soft-ripened, evenly creamy
How to serve it
Straight out of the pack at room temperature — that’s the whole point of the format. One wheel feeds two as an appetizer or one as a commitment; it’s the right size for a weeknight board with crackers, apple slices, and a little jam. It also bakes well if you want a warm centerpiece.
Drink with it: A Helles or a clean lager — mild cheese, mild beer. A lightly oaked Chardonnay or an off-dry Riesling works for wine drinkers.
Finding it in America
